Spring One Sheet Pan Meal Prep
Ingredients
- Small bunch of radishes, halved
- Small bunch of carrots, diced
- 1 cup asparagus, chopped
- 3-4 potatoes, scrubbed and quartered
- ½ small red onion, loosely chopped
Directions
- Preheat oven to 400 degrees F.
- Lightly oil or line a large baking sheet with parchment paper.
- Add all of the veggies to the tray. Drizzle with olive oil and add seasonings. Toss until everything is well combined and arrange the veggies in a single layer on the tray.
- Bake for 25-30 minutes or until all of the veggies are fork-tender.
- Enjoy immediately or store the veggies in air-tight containers in the fridge for your weekly meal prep.
