Lightly oil or line a large baking sheet with parchment paper.
Add all of the veggies to the tray. Drizzle with olive oil and add seasonings. Toss until everything is well combined and arrange the veggies in a single layer on the tray.
Bake for 25-30 minutes or until all of the veggies are fork-tender.
Enjoy immediately or store the veggies in air-tight containers in the fridge for your weekly meal prep.
