Prepare your Ginger Stir Fry Sauce by simply adding all the ingredients to a small mixing bowl and giving it a quick whisk until the sauce is well combined. Set aside.
In a large skillet over medium heat, add about a tablespoon of olive oil. Add whatever leftover/extra veggies you have on hand (almost everything tastes good in a stir-fry!).
Continue to cook, stirring often, until the veggies are fork-tender. About 10 minutes. Add a few spoonfuls of the sauce to the veggies while they are cooking to add flavor.
Once the veggies are done cooking, serve them over a bed of rice or noodles and add more sauce as needed. Sprinkle with sesame seeds to garnish.
